Xanthan gum is used as a thickener and a preservative. Xanthan gum is derived from certified non-GMO corn, sugar cane or sugar beets. The source of xanthan gum can change depending on the supply and availability of raw materials. 

The carbohydrates in these plant sources are fermented to generate this polysaccharide gum. However, because it is processed, it cannot be certified organic.
