Why is my Coconut Oil yellow or have brown seditment on the bottom?Updated 10 days ago

Rest assured that the yellow and/or brown deposit often found in our Regenerative Organic Virgin Coconut Oil (VCO) is completely normal (though it isn’t always present). This color is actually caused by tiny particles of caramelized VCO created during the expelling process. What you see at the bottom of the jar is the occasional slippage of the very fine sediment that passes through this filtration system. It’s similar to the kind of sediment you may see in virgin olive oil or other “native oils" when you put them in the fridge. 

Any virgin coconut oil made using a dry process, like ours, tends to have visible sediment when it comes out of the expeller press. Since we air-dry the coconut flesh at around 425°F (220°C), some caramelization occurs during drying, which gives the sediment a slightly brownish hue. However, most of this sediment is usually removed through a multistage filtration process. We've done extensive studies on visible sediment to ensure that it does not promote biological growth or affect the safety and quality of the VCO.
